In Morrowind you really have to think about what type of character you want to play and then pick your race, birthsign, and skills based on that. The 3 basic classes are fighter, mage, and thief. Morrowind on the xbox is nothing like Morrowind on the PC. It doesn't have the looks of the PC version (so forget all the talk about how beautiful Morrowind is).
